Preparation

This entire recipe calls for a bit of ingredients that require preparation. For instance, you’ll save the most time if you have hard boiled eggs on hand already, pre-cooked shredded chicken, and ground chicken to form your patties. If not, I’d recommend you get these items before proceeding! (Personally, I buy my hard boiled eggs at the store!)

Macros

This meal is packed with protein and great for when consuming only 1-2 meals a day. If you eat 3 meals a day, then you may want to consider simply eating the salad for lunch, with the lettuce wrapped chicken burger for dinner. Just an option to consider, but all dependent on your fitness goals!

Ingredients

Grilled Chicken Burgers:

  • 8 oz Ground Chicken Meat (*Will form 2 patties)
  • 1/2 tsp Pink Salt
  • 1/2 tsp Black Pepper
  • Dash of Cayenne
  • 2 tbsp Mayo

Salad:

  • 6 cups Iceberg Lettuce (*About 30% to wrap and 70% for salad)
  • 4 tbsp Real French Vinaigrette Dressing (*By Briannas)
  • 4 slices Bacon
  • 6 large Boiled Eggs
  • 4 oz Shredded Chicken Thighs
  • 1/2 tsp Pink Salt
  • 1/2 tsp Black Pepper

Instructions

Chicken Burgers:

  • Form chicken meat into 2 patties. Season with salt, pepper, and cayenne. Using a grill, heat your grill on high. (*Note you can also use a griddle, etc.)
  • Place chicken patties on grill, cook for 6 minutes each side, or until cooked completely through. Be sure to keep grill closed during cooking and ensure it remains on high heat.
  • Set aside a few pieces of whole lettuce to eventually wrap your burgers with. Slather them with mayo and other condiments of your choice, such as mustard. Once chicken patties are cooked, place them on lettuce wraps.

Salad:

  • In a pan, over medium-high heat, cook 4 slices of bacon until fully crisp.
  • Cut your remaining amount of lettuce for your salad. Slice your boiled eggs.
  • Slightly warm your shredded chicken if already cooked. If not, cook via your bacon grease until it reaches a temperature of 165 degrees F.
  • When all food is cooled and chopped, add all toppings to your salad: vinaigrette dressing, chicken, boiled eggs, salt/pepper, with bacon on top. Toss until combined. Enjoy!
