Chicken Goat Cheese Chili

This is a unique take on chili! First, I’ve included ground chicken. Second, I’ve incorporated goat cheese. Hence I’ve titled this recipe: Chicken Goat Cheese Chili. The reason I mostly use goat cheese in all recipes is because goat’s milk is less inflammatory than cow’s milk. I used to suffer from intense lower back pain, which has all but disappeared. I know that the keto lifestyle generally reduces inflammation, but a lot has to do with healthy food choices, of course, as well.

Despite the many keto based benefits, be sure to keep in mind you have to keep your electrolytes up! You can suffer from horrible leg/muscle cramps, due to not getting enough potassium/sodium. I personally use Endure, Performance Electrolyte. Despite the many keto health benefits, if your electrolytes aren’t properly available, you will suffer! If you’re new to keto – keep in mind, salt is not bad, and you’ll need more than normal with this lifestyle!

  • 1 lb Ground Chicken Meat
  • 1/2 cup Red Onion
  • 4 cups Chicken Bone Broth
  • 2/3 cup Diced Tomatoes *Canned, BPA Free
  • 2 oz Goat Cheese Log, Montchevre
  • 1 medium Jalapeno
  • 1 tbsp olive oil


  • 1 tbsp garlic
  • 1 tsp Chili Powder
  • 2 1/4 tsp Pink Salt
  • 1 tsp Basil
  • 1/2 tsp Cumin
  • 3/4 tsp Black Pepper


  • 2 tbsp Fresh Parsley
  • 2 oz Goat Cheese Log, Montchevre


  • You can definitely use a crock pot to cook this meal in. I simply used a skillet, but feel free to do what works best for you! **The instructions for this recipe are taking into account using a skillet.
  • Begin by cutting your onion. Over medium-high heat, in a skillet, cook your diced onion in olive oil until onion is translucent. Add your ground chicken; cook completely.
  • While chicken is cooking, prepare your other ingredients: cut your jalapeno and parsley. Do not touch the seeds of the jalapeno; if you do, do not touch your face or eyes!
  • Next, add your bone broth and diced tomatoes to your onion/chicken mixture. Then, add half of your goat cheese to your chili. Cook for another 5 minutes, until everything is incorporated.
  • Add all spices/seasonings to your chili: garlic, chili powder, salt, basil, cumin, and black pepper. Reduce heat to medium-low.

  • Allow chili to simmer for 30 minutes - 1 hour, stirring occasionally, and until your liquids have reduced enough, per your preference.

  • Top your chili with remaining cheese and with fresh parsley. Serve and enjoy!!
