Keto Smoked Salmon Pinwheels with Mac and Cheese

I intended for today’s lunch to be very quick and easy, due to an eye doctor’s appointment. It was! I made quick and easy smoked salmon pinwheels, slathered with cream cheese. I prepped the pinwheels before my appointment and it was ready for cutting upon my return. We also had a side of mac & (goat) cheese! I hope you give this recipe a try and enjoy it as much as we did!

My eye doctor appointment went really well – no signs of damage to my eyes, despite being a Type 1 diabetic for 20 years. I confirmed that my eyes do not show any sign of me being diabetic at all. (Surely my 5.7% A1C has something to do with this.) I wouldn’t be surprised if the ketogenic lifestyle has been helpful here and most importantly, that it will continue to be. It’s all about blood sugar regulation, and these days, that is what I have.

Keto Smoked Salmon Pinwheels with Mac and Cheese

Ingredients

Smoked Salmon Pinwheels:

  • 8 oz Smoked Salmon *I used Vita Classic, 2 pack - 4 oz each
  • 2 tbsp Fresh Chives
  • 4 oz Original Cream Cheese *Room Temperature
  • Dash of Salt, Black Pepper, Cayenne

Mac & Cheese:

  • 1 bag Frozen Cauliflower Florets *Or 1 head of cauliflower cut into small florets
  • 2 tbsp Unsalted Butter
  • 4 tbsp Heavy Whipping Cream
  • 4 oz Original Cream Cheese *Room Temperature
  • 4 oz Manchego Cheese
  • 2 tsp Dijon Mustard
  • 1.5 tsp Pink Salt
  • .5 tsp Black Pepper
  • .5 tsp Garlic Powder
  • 1/4 tsp Cayenne

Instructions

Smoked Salmon Pinwheels:

  • Set a large piece of cling wrap onto your workspace. Lay down 1 of your pieces of smoked salmon.
  • Gently spread your room temperature cream cheese across the salmon. *If short on time, you can microwave the cream cheese for about 15 seconds to make it more spreadable.

  • Cut your chives and then lay them towards the end of your piece of salmon, bunched together. Season salmon with salt, black pepper, and a dash of cayenne.

  • Using the cling wrap to guide you, roll the salmon as tightly as you can. Set aside.

  • Repeat with your second piece of salmon, then place both in the refrigerator for at least 30 minutes.
  • Once chilled, using a knife, cut your roll into individual 1/2 inch slices.

Mac & Cheese:

  • Preheat your oven to 375 degrees F, 190 degrees C.
  • If using frozen cauliflower, microwave the florets per the bag's instructions.
  • Use butter to grease your baking dish. Then, add your cauliflower, along with any remaining butter.
  • Add your remaining ingredients to your baking dish: heavy whipping cream, mustard, cream cheese, and goat cheese. Mix thoroughly.
  • Add your spices & seasonings: salt, black pepper, garlic, cayenne, and thyme. Mix thoroughly to ensure everything is incorporated.

  • Bake for 10 minutes. After 10 minutes, stir the mac and cheese and bake for another 2-5 minutes. Enjoy!!
