This Keto Breaded Turkey Cutlets with a Creamy Zucchini Soup recipe is so filling and savory! I chose to incorporate a typical pork rind breading, one of my favorite. It results in the crispiest coatings! There’s also plenty of seasoning involved, to really make the turkey cutlets even better. There’s a bit of cayenne for spice, and some lemon to really freshen everything up. The zucchini soup is creamy, comforting, and packed with nutrients!

This is a great meal when you are doing intermittent fasting, in order to consume the majority of your nutrition in 1-2 meals. If you do not intermittent fast, most likely, you’d be better off having the zucchini soup for lunch and the turkey cutlets with a salad for dinner. Either way, I hope you make this soon – so you can see how easy and flavorful it was!

Ingredients

Turkey Cutlets:

  • 4 Turkey Breast Cutlets
  • 2 large Eggs
  • 2/3 cup Pork Rinds
  • 4 tbsp Shredded Cheddar Cheese
  • Salt/Pepper
  • 1/2 tsp Cayenne
  • 3/4 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder
  • 2 tbsp Unsalted Butter
  • 1 medium Lemon
  • 1 tsp Fresh Thyme

Zucchini Soup:

  • 3 cups Sliced Zucchini
  • 2 cups Chicken Bone Broth
  • 1/2 cup Heavy Whipping Cream
  • 1/2 cup Shredded Cheddar Cheese
  • 4 oz Original Cream Cheese
  • 2 tbsp Unsalted Butter
  • 1 tsp Pink Salt
  • 1/2 tsp Black Pepper
  • 1/4 tsp Cayenne
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Xantham Gum

Instructions

Zucchini Soup:

  • Begin by making the creamy zucchini soup. Slice zucchini into very thin slices - about 1/8 inch thick.
  • Over medium-high heat, add butter to skillet. Place zucchini in skillet. Cook until tender.
  • Add chicken bone broth to skillet. Using hand blender, blend zucchini slices until smooth.
  • Add heavy whipping cream. Mix together. Add cream cheese. Then, gradually add shredded cheese.
  • Reduce heat to medium-low. Add all spices/seasonings: salt, pepper, cayenne, garlic, chili powder. Allow soup to simmer for 10 minutes.
  • Add xantham gum; let soup simmer another 5-10 minutes. Serve and enjoy!

Turkey Cutlets:

  • Prepare 2 bowls for dipping. In 1 bowl, place both eggs; beat the eggs. In another bowl, place pork rinds, shredded cheese, and all spices/seasonings: cayenne, italian seasoning, and garlic powder - and mix together.
  • Salt and pepper turkey cutlets.
  • Dip turkey cutlets into egg, then roll in pork rinds mixture.

  • In a large skillet, cook turkey cutlets in butter over medium heat for 5-6 minutes on each side. Drizzle cutlets with fresh lemon and top with fresh thyme.
