Here is my Keto Ultimate Creamy Egg Salad! I added a unique ingredient to this egg salad: avocado! I did not use a significant amount; certainly not enough to turn it green! If you are someone who doesn’t love avocado, don’t worry – you can’t really taste it. Although I added avocado, I still added mayo as well. Of course, in ketogenic thinking, I wanted the fat! Because of both avocado and mayo, this egg salad turned out exceptionally creamy. (I did not shy away from the mayo.) The flavor was on point and we ate it very quickly!
Store Bought Eggs!
One major tip to share: I cheated with the eggs. I bought hard boiled eggs from the store, already made and peeled. They cost $1.97 for 6 eggs. This is a bit more expensive than doing it myself. However, for only saving a few cents, or even just a dollar, it’s so worth the extra money for my time! If you’ve never done this, do it. You’ll love them!
Serving Keto Ultimate Creamy Egg Salad
To eat this egg salad, we used romaine lettuce wraps. You can definitely do the same. Alternatively, if you have low carb bread on hand, that would be amazing. Since I track total carbs, and avocado has quite a few carbs, I didn’t want to add even more to my day. I ended my day with 20 total carbs, 9 fiber. My macros were 75% fat, 20% protein, and 4% carbs. I think I had a very solid day! How about all of you? How is keto working for you?
Keto Ultimate Creamy Egg Salad
- 8 hard-boiled Eggs
- 1 medium Avocado Pitted & Peeled
- 1/2 cup Mayo
- 2 tsp Fresh Lemon
- 1 tbsp Fresh Parlsey
- 1 tsp Mustard
- 1/4 tsp Paprika
- Salt & Pepper - to Taste *I used about 1/2 a tsp for salt, 1/4 tsp for pepper.
- Dash of Cayenne
- 2 medium Green Onions
- 4 Romaine Lettuce Leaves
- In a medium sized mixing bowl, mash avocado, mayo, and lemon juice together.
- Stir in cut up eggs.
- Add: parsley, mustard, paprika, cayenne, salt and pepper. Stir again to fully incorporate.
- Top egg salad with cayenne and green onions. Serve on top of romaine lettuce leaves. Enjoy!
