Personally, I did not eat anything along with this pot roast and mushroom gravy. However, my husband enjoyed mashed cauliflower potatoes with his pot roast. We find that he needs closer to 30-40 carbs to maintain his weight. I need as few carbs as possible to lose weight. On really good days, I consume about 10 carbs total and that tends to work great!

Ingredients

Pot Roast:

  • 2.5 lbs Beef Chuck Roast (About 40 oz)
  • 1.5 tsp Pink Salt
  • 1 tsp Black Pepper
  • 1 tsp Minced Garlic
  • 1/4 - 1/2 tsp Red Pepper Flakes
  • 1 cup Beef Bone Broth

Gravy:

  • 8 oz Mushrooms
  • 1/2 cup Heavy Whipping Cream
  • 1 cup Beef Bone Broth
  • 1/2 Fresh Lemon Juice
  • 1.5 tsp Pink Salt
  • 1/2 tsp Black Pepper
  • 3 Sprigs Thyme
  • 1 tsp Minced Garlic
  • 1 tbsp Parsley
  • 1/2 tsp Cayenne
  • 1/2 tsp Xantham Gum

Instructions

  • Season beef chuck roast on both sides with salt, pepper, minced garlic, and red pepper flakes. Place in slow cooker. Pour beef bone broth in the slow cooker. Place slow cooker on High, for 4 hours.

  • After about 3.5 hours, begin to make gravy.
  • In a blender, combine: 1 container of mushrooms, heavy whipping cream, beef bone broth, and juice from half of a lemon. Blend until smooth.
  • In a skillet or pan, over medium-high heat, pour in blended ingredients.
  • Add spices/seasonings: salt, pepper, thyme, minced garlic, parsley, and cayenne. Allow to cook for about 10 minutes.

  • After 10 minutes, add in xantham gum. Reduce heat to medium-low. Allow sauce to thicken to desired consistency. It should be set within 5 minutes!
