TYPE 1 DIABETES:

I may over simplify, but with being a Type 1 diabetic, as long as my blood sugars are good, I am happy! I feel great, I have tremendous energy, etc. It’s hard to recall what poor blood sugars are like these days. However, I do remember anytime a sugar was over 300 (when I wasn’t keto), I’d be extremely dehydrated, tired, and moody. I certainly don’t miss those days. I am glad to have stability now – and blood sugars that average 90 every day. My latest A1C was 5.6 or 5.7%. I can’t wait to hear what my next one is! I am actually aware of diabetics who have A1C’s in the 4% range. This is incredible! I guess there is always room for improvement.

RECIPE OVERVIEW:

To continue improving, of course I am sticking with a strict keto diet. The recipe I made to share with all of you is focused on grilled chicken burgers. Along with the burgers, I made maple flavored brussels sprouts. By themselves, these ingredients aren’t overly carb filled. That is, chicken and brussels sprouts aren’t outrageously filled with carbs. However, obviously by not using a bun, not using real maple syrup, etc. this ensures it stays that way! By simply incorporating better choices, the carbs are perfectly low.

The roasted brussels sprouts will take a bit more time to make than the grilled chicken burgers, so I’d recommend you get a head start on them when preparing this meal.

GRILLED CHICKEN BURGERS – SPECIFICS:

If you do not have a grill, I’d suggest that you bake your chicken patties instead. Using refrigerated ground chicken meat, this could take anywhere from 15-20 minutes. What I would suggest is that you use a meat thermometer and cook your patties until they reach a temperature of 165 degrees F, or 73 degrees C.

To form the best looking patty, I used a Cuisinart Burger Press. The reason this is important is that it helps you perfect the size of each patty, so that they cook at the same times. Otherwise, you’ll have the burgers finishing inconsistently and thus causing problems on their own! Ingredients

Roasted Maple Brussels Sprouts:

  • 1 Frozen Bag of Brussels Sprouts *3 total cups
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 3 tsp Maple Extract
  • 2 tbsp olive oil

Grilled Chicken Burgers:

  • 1 lb Ground Chicken
  • 1 medium Jalapeno
  • 5 oz Manchego Cheese
  • 1/4 cup Yellow Onion
  • 1 1/2 tsp Sea Salt
  • 1 tsp Black Pepper
  • 1 1/2 tsp Garlic Powder
  • 1 tsp Chili Powder
  • Green Onion - Topping Optional
  • Romaine Lettuce Leaves - for Wrapping Optional

Instructions

Roasted Maple Brussels Sprouts:

  • Preheat your oven to 425 degrees F, 218 degrees C.
  • Microwave your bag of frozen brussels sprouts per about 1/2 the time the package indicates. (We want to be able to cut them in half, hence some cooking, but not fully.)
  • Once cooled, cut your brussels sprouts in half. Then, place them on a baking sheet with a silicone mat (or parchment paper). Ensure they are spread out and not touching on the sheet.
  • Sprinkle salt and pepper over brussels sprouts, from a foot above the sprouts. This will ensure they are evenly coated with the salt and pepper.
  • Next, add maple extract and olive oil. Ensure the brussels sprouts are fully covered per both.

  • Bake the brussels sprouts for 15 minutes. After 7 minutes, shake sheet for even browning.
  • Then broil them for another 3 - 7 minutes, to make them extra crispy. Remove from oven once done broiling.

Grilled Chicken Burgers:

  • Prepare your outdoor grill over high heat. If you do not have a grill, refer to my instructions above on baking the chicken burgers instead.
  • Dice your onion and jalapeno. Also, shred the cheese if not shredded already. In a medium sized mixing bowl, add the onion, jalapeno and cheese. Next, add all spices/seasonings: salt, black pepper, garlic, and chili. Finally, add the ground chicken.
  • Using your hands, mix everything together until just fully incorporated. You will not want to over mix!

  • Using a burger press, form mixture into 6 even patties. (Each should be about 1/2 of an inch thick.)
  • Once your grill is warmed, arrange all chicken patties onto the grill. Cook for 5 minutes, flip once, and cook for another 5 minutes. Remove from grill.
