Keto vs. Standard Pasta

I am a little obsessed with ‘keto pasta’. Maybe more than a little! Since I can now eat it and maintain normal blood sugars, it’s my preferred go to! As a Type 1 diabetic, normal pasta isn’t even worth the hassle of consuming. I guess after 20 years of being a type 1 diabetic, I simply found a much better strategy! This Fettuccine Alfredo and Baked Chicken Meatballs dish is definitely a perfect approach, both from a flavor perspective and health perspective! The chicken meatballs in this recipe are baked and so, so good. They brown beautifully! I usually don’t bake meatballs, but it’ll be my new approach from now on!

Being Keto

I love that in the keto world, keto does not mean we are losing major foods, flavors, or enjoyment. As someone who used to have a non-stop appetite, it’s so nice to have a normal relationship with food these days. I love food, deeply enjoy it, but I am not intensely obsessed with when my next meal is. There’s such a rhythm with eating, with portions, and with appetite. I regret not becoming keto sooner, mostly! After all, these are the kinds of food I get to consume – lose weight – and feel great with!

Ingredients

Meatballs:

  • 1 lb Ground Chicken
  • 1 large Egg
  • 4 oz Montchevre Cheese/Goat Cheese
  • 2 oz Pork Rinds
  • 1/4 cup Fresh Parsley, Chopped
  • 1.5 tsp Pink Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Red Pepper Flakes
  • 1 tsp Garlic Powder

Fettuccine:

  • 3 packs Miracle Noddles (Fettuccine)
  • 4 oz Original Cream Cheese
  • 1/2 cup Heavy Whipping Cream
  • 1.5 tsp Pink Salt
  • 1 tsp Black Pepper
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder

Instructions

Meatballs:

  • Preheat your oven to 400 degrees F, 204 degrees C.
  • In a plastic bag, add your pork rinds. Beat with a meat tenderizer, spoon, rolling pin, etc. until completely smashed.
  • Place the meatball ingredients in a medium sized mixing bowl. Include the: chicken, egg, montchevre, pork rinds, fresh parlsey, salt, pepper, red pepper flakes, and garlic.

  • Using your hands, mix all ingredients together. Do not over mix, just mix until everything is incorporated!
  • Roll the mixture into about 20 meatballs. Try to make them the same shape as much as possible, for proper cooking time. I just eyeballed mine when shaping, but you can use an ice cream scoop, meatball scoop, etc. for better precision.
  • Place the meatballs onto a baking sheet, with a silicone mat or parchment paper.

  • Bake your meatballs for 25-30 minutes, or until chicken reaches temperature of 165 degrees F, 74 degrees C.

Fettuccine Miracle Noodles:

  • Boil your water for your noodles in a nonstick skillet or pot.
  • Rinse your fettuccine miracle noodles in water. *I use shears to cut mine so they're smaller and easier to work with. Once rinsed for a few minutes, or according to the package's instruction, boil the noodles for 5-10 minutes.
  • After you've boiled the noodles for several minutes, drain them, and then add them back to your skillet or pot. Reduce your heat to medium-high. Cook for 2 minutes, to remove moisture from the noodles.
  • Add your cream cheese, heavy whipping cream, and spices (salt, pepper, italian seasoning, and garlic) to the noodles. Stir until cream cheese is melted and everything is incorporated.

  • Reduce your heat to medium-low. After simmering for 5-10 minutes, serve with meatballs. Feel free to top with fresh parsley.
