Keto Frozen Whipped Cream Peanut Butter/Chocolate Bites

These Keto Frozen Whipped Cream Peanut Butter/Chocolate Bites are surprisingly similar to ice cream sandwiches! For variety, I’ve included options to create both chocolate and peanut butter flavors. Both options form nice hard shells, while the whipped cream remains soft and creamy inside. These frozen bites go well with coffee, hot cocoa, or are also perfect to enjoy alone! Personally, I ate my bites without beverages – and enjoyed them tremendously! I may have favored the peanut butter frozen bites slightly more, but I think the chocolate bites ended up looking pretty cool, with a neat design!

Silicone Mold

I based this recipe off of a silicone mold that I used. You can find it here: https://www.amazon.com/gp/product/B004GGCS2W/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B004GGCS2W&linkCode=as2&tag=ambersketokit-20&linkId=c1e503917067885aa5e40acf74fbf9cb If you do not have this silicone mold, or if you do not want to purchase it, that’s perfectly okay! You can still make these frozen bites. I would recommend still using some sort of silicone mold, though, if possible. It will help with freezing the chocolate and peanut butter shape, along with portion size control. You could also form the bites into one large serving and then separate them later into 12 bites (by using a cookie cutter). Either approach should work perfectly fine. However, my recipe is specific to having a silicone mold on-hand, which is generally quicker and easier!

Ingredients

Whipped Cream:

  • 1/2 cup Heavy Whipping Cream
  • 1 tsp Vanilla Extract
  • 2 tbsp Swerve Confectioners

Chocolate:

  • 1 oz Lily's 70% Dark Chocolate
  • 1 tsp Swerve Confectioners
  • 1 tsp Vanilla Extract
  • 2 tbsp Heavy Whipping Cream
  • 1 tsp Sea Salt Flakes

Peanut Butter:

  • 2 tbsp Peanut Butter Fit Powder
  • 2 tbsp Water
  • 1 tsp Sea Salt Flakes

Instructions

Whipped Cream:

  • Using a stand mixer or hand mixer, whip heavy whipping cream, vanilla extract, and swerve on High speed. Whip until stiff peaks form, which should take 3-5 minutes. Refrigerate until ready to form frozen bites.

Chocolate:

  • Make chocolate sauce. Microwave Lily's chocolate, swerve, vanilla extract, and heavy whipping cream. Microwave for 30 seconds. Stir for at least 15-30 seconds. Microwave for another 15 seconds, if necessary.
  • Retrieve your whipped cream from the fridge. Get your silicone heart mold ready.
  • In 6 of the heart molds, place about 2 tsp of chocolate in the bottom, until about half full. Next, evenly distribute the sea salt flakes on top of the chocolate. Add whipped cream on top of the chocolate, until heart shape is completely filled.

Peanut Butter:

  • Make peanut butter topping. Add water to PB Fit Powder. Stir.
  • Fill remaining 6 hearts with about 3/4 of whipped cream. Top with peanut butter and sea salt flakes. Use your fingers as necessary to ensure the heart fillings are evenly distributed.

Freeze:

  • Freeze for at least 2 hours before enjoying.
