This Keto Chicken Tenders with Coconut Peanut Sauce recipe is so hearty! The chicken tenders have a crunchy coating, with a wonderful flavor from being cooked in the air fryer. The chicken ends up being very juicy and tender. Although the chicken tenders will seem like a treat, they are completely guilt free from a nutritional standpoint.

To pair with the chicken tenders is a creamy coconut peanut sauce. The sauce is Thai inspired and it is somewhat sweet. It’s thick and perfect for dipping and has a nice crunch based on the peanuts garnishment. Overall, this meal is completely keto friendly, which I think you’ll find hard to believe, but will definitely enjoy!

Ingredients

Chicken:

  • 20 oz Chicken Breast Tenders
  • 1.5 tsp Pink Salt
  • 1 tsp Black Pepper
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/2 tsp Paprika

Egg Wash:

  • 1 large Egg
  • 1 tbsp Water

Chicken Breading (Pork Rinds):

  • 2 oz Pork Rinds

Peanut Coconut Sauce:

  • 4 tbsp Brown Sugar Keto Alternative (I used Sukrin Gold)
  • 6 tbsp Creamy Peanut Butter
  • 1/2 cup Canned Coconut Milk (I used Thai Kitchen)
  • 1 tbsp Liquid Aminos
  • 1 tsp Pink Salt
  • 1 tsp Garlic Powder
  • 1/2 tsp Red Pepper Flakes
  • 1 tbsp Swerve Confectioners (Powdered)
  • *Silk Coconut Milk (Unsweetened) to thin as necessary

Instructions

Chicken Tenders:

  • Using a large ziplog bag, crush your pork rinds, with a meat tenderizer, rolling pin, etc. In a medium sized bowl, add your pork rinds. Next, add your chicken spices: salt, pepper, italian seasoning, garlic powder, and paprika.
  • Create your egg wash by combining your egg and water in a small bowl. Mix with fork until combined.

  • Spray your air fryer with olive oil cooking spray. (Recommend using at least a 3.5 liter air fryer.)
  • Dip each chicken tender in the egg wash (using right hand) and then in the pork rinds (using left hand). Add chicken tenders to air fryer. (You'll want to ensure there's no overlap and adequate spacing, so if you don't have enough spacing, you'll want to cook in 2 batches.) Cook at 400 degrees F, 204 degrees C, for 15-18 minutes.

Peanut Coconut Sauce:

  • Whisk together all ingredients until smooth, including your brown sugar, peanut butter, coconut milk, liquid aminos, salt, garlic powder, red pepper and swerve. If necessary add Silk coconut milk, very gradually, to thin sauce.
  • Optionally: garnish with crushed peanuts.
  • Chill sauce in refrigerator for about 15 minutes, before serving.
  • Enjoy!
