These Keto (Air Fryer) Swedish Meatballs are so hearty! Cooked in the air fryer, they are perfectly crisp on the outside, while they remain tender and juicy on the inside. Packed with flavor, they are actually made from ground sirloin beef patties. They are smothered in a creamy and rich gravy. The gravy includes sour cream, cream cheese, heavy whipping cream, chicken bone broth, and spices/seasonings. Overall, this is a very filling and enjoyable meal!

You will quickly see how easy this recipe is to prepare! I used a unique ingredient to make these meatballs: prepared sirloin beef patties. After assembling the patties with eggs, spices, and parsley, you will simply form your meatballs. To make the perfect meatballs, you can be sure to use a ‘meat baller’ –

Next, you will air fry your meatballs. As the meatballs are air frying, a gravy is made in a cast iron skillet. Once done, you can add your meatballs to the gravy and serve!

If you want to keep this recipe zero carb, then you won’t need to do anything else. (Keep in mind that based on the recipe itself, there is 67.6% fat involved and 32.0% protein included.) Despite being a zero carb dish, it’s in fact pretty high in fat! However, if you would prefer to add some vegetables, many will pair perfectly with this dish. You could add cauliflower mashed potatoes (recipe for mashed potatoes can be found here), zucchini noodles (veggie spirals), or cauliflower rice.

Ingredients

Meatballs

  • 5 Sirloin Beef Patties (about 27 oz) (Thawed, not frozen)
  • 4 tbsp Fresh Parsley, Chopped
  • 2 tsp Pink Salt
  • 1 tsp Black Pepper (Table Grind)
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1/4 tsp Ground Allspice
  • 2 large Eggs
  • 2 oz Grated Parmesan Cheese

Gravy

  • 2 tbsp Sour Cream
  • 2 oz Original Cream Cheese
  • 1/4 cup Heavy Whipping Cream
  • 2 cups Chicken Bone Broth
  • 1 tsp Xantham Gum
  • 1.5 tsp Pink Salt
  • 1/2 tsp Black Pepper (Table Grind)
  • 1/2 tsp Chili Powder
  • 1 tsp Lemon Juice
  • 1 tsp Decaf Coffee
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder

Instructions

Meatballs

  • In a large mixing bowl, combine sirloin beef patties, fresh parsley, salt, pepper, onion powder, garlic powder, allspice, eggs, and grated parmesan cheese. Mix until combined.
  • Form 20 meatballs. (I used a meat baller to form 1.75" meatballs.) If your air fryer is smaller, you may need to cook in multiple batches. You won't want to crowd or stack the meatballs.
  • Air fry the meatballs at 375 degrees F, 191 degrees C, for 10-12 minutes total. After 6 minutes, flip them once. Ensure the temperature reaches 160 degrees F, 71 degrees C.
  • Once cooked, set aside.

Gravy

  • Using a cast iron skillet (or pan), begin to make gravy, over medium-high heat. Add your sour cream, cream cheese, heavy whipping cream, and chicken bone broth. Stir together, until everything is melted and combined.
  • Stir in your salt, black pepper, chili powder, lemon juice, decaf coffee, onion powder, and garlic powder.
  • Stir in your xantham gum. Reduce heat to medium-low.
  • Add your cooked meatballs to the gravy and let them simmer, until warmed again.
