These Keto Beef Stroganoff Meatballs are so juicy! They are also crispy, from being cooked in the air fryer. The meatballs are paired with a decadent and complementary sauce. Staying true to typical stroganoff, the sauce includes mushrooms, sour cream, and seasoning. The meatballs and sauce are served over cauliflower rice. Despite having many of the typical flavors of beef stroganoff, this dish is low carb and keto friendly. In fact, each serving only has 5 net carbs, despite the vegetables involved! Overall, this is a straightforward dish to make, with a creamy and flavorful outcome.

To make this recipe, you will need the following items:

  1. Medium Mixing Bowl
  2. Measuring Cups & Spoons
  3. Meat Baller (Optional, but helpful with making meatballs all the same size) –
  4. Disposable Gloves to form meatballs (Optional)

  6. Food Scale (This scale is absolutely worth the price because it’s battery free! I love mine!) –
  7. At least a 10″ Pan (I have been using Ceramic lately.) –

Ingredients

Meatballs

  • 16 oz Ground Beef, 85% Lean/15% Fat
  • 1 tbsp Olive Oil
  • 2 large Eggs
  • 2 oz Grated Parmesan Cheese
  • 1.5 tsp Pink Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1.5 tsp Onion Powder

Sauce

  • 2 tbsp Unsalted Butter
  • 16 oz Sliced Mushrooms
  • 2 tbsp Dijon Mustard
  • 1/2 cup Sour Cream
  • 1.5 cups Chicken Bone Broth
  • 2 tsp Pink Salt
  • 1 tsp Black Pepper
  • 1.5 tsp Onion Powder
  • 1/2 - 3/4 tsp Xantham Gum

Serve

  • 3 cups Cauliflower Rice
  • Salt & Pepper - to taste

Instructions

Meatballs

  • In a medium sized mixing bowl, add your meatball ingredients: ground beef, olive oil, eggs, grated parmesan, salt, black pepper, garlic powder, and onion powder.
  • Mix until combined. (I like to use disposable gloves when mixing, but you can do so without.) Form 20 1.5" meatballs.
  • Add meatballs to your air fryer. (If your air fryer is smaller, you may need to cook in multiple batches. You won't want to crowd or stack the meatballs.)

  • Air fry the meatballs at 375 degrees F, 191 degrees C, for 8-10 minutes
    total. After 5 minutes, flip them once. Ensure the temperature reaches
    160 degrees F, 71 degrees C.

Sauce

  • While meatballs are cooking, prepare your sauce. In at least a 10" pan, over medium-high heat, melt your butter. Add your mushrooms. Stir frequently; cook until mushrooms are tender and browned.
  • Next, stir in your dijon mustard, sour cream, and chicken bone broth.
  • Season with salt, pepper, and onion powder. Stir in xantham gum. (Start with the least amount of xantham gum listed and only add more, very gradually, after waiting several minutes.)
  • Reduce heat to medium-low. Allow sauce to simmer for at least 15 minutes.
  • Once meatballs are cooked, add them to your sauce.

Serve

  • Season your cauliflower rice with salt and pepper. Serve meatballs and sauce over cauliflower rice. Enjoy!

Not sure I did it right. Was thick. My husband said to use mashed cauliflower instead next time. He not a fan of rice.
