This Blueberry Lemon Pork Loin {Keto, AIP} recipe includes tender pork, with a sweet and light blueberry lemon sauce. The sauce includes fresh blueberries, lemon juice, sugar free syrup, coconut butter, orange extract, and salt. Despite being simple, with limited ingredients, it’s a sauce you won’t be able to get enough of! With the pork having a lemon flavoring, overall this is definitely a sweet and salty dish. Better yet, this food is filling, but light, making this a great dish for a summer day.

Many sides will complement this dish well! We ate ours with salted broccoli rice and onion powder, with an olive oil drizzle. Cauliflower mashed potatoes would also be a great option. Steamed asparagus, or even asparagus wrapped in prosciutto or bacon would be perfect. Roasted brussels sprouts would be great, especially if paired with some of the additional sweet lemon blueberry sauce.

As a note regarding the macros, I do not personally subtract sugar alcohols from my total carb amount (unless it’s erythritol). The sugar free syrup I used includes 5 grams of carbs and 5 sugar alcohols in 2 tbsp. The nutritional label below only accounts for fiber, not sugar alcohols. Thus, if you follow your net carbs, you’ll want to also subtract any sugar alcohols from the total carbohydrates.

Ingredients

Pork Loin

  • 2.3 lbs Pork Loin Filet, Boneless
  • 1.5 tsp Pink Salt
  • 1 tsp Garlic Powder
  • 3 tbsp Lemon Juice
  • 3 tbsp Olive Oil
  • 1 tsp Black Pepper (If not AIP)
  • 1 tbsp Olive Oil (for Searing)
  • 1 cup Water

Blueberry & Lemon Sauce

  • 2 tbsp Coconut Butter (Butter is fine, if not AIP)
  • 1 medium Lemon, juiced
  • 2/3 cup Fresh Blueberries
  • 2 tbsp Sugar Free Syrup
  • 1 tsp Orange Extract (Alcohol Free if AIP)
  • 1/4 tsp Pink Salt

Instructions

Pork Loin

  • Add your pork loin to a large ziploc bag, at least a gallon size. Add your spices/seasonings: salt, garlic powder, lemon juice, olive oil, and optionally black pepper.
  • Shake your bag to ensure the pork gets evenly covered. Let pork loin marinate for 30 minutes in the refrigerator.
  • Once marinated, prepare your Instant Pot. Select "Saute" via your Instant Pot. Wait for the words "Hot" to appear, which should only take a couple of minutes. Once "Hot" shows up, add remaining olive oil to instant pot, for searing purposes.
  • Add your pork loin to the instant pot. Sear for about 4 minutes per side, until a crust develops.
  • When done searing, press cancel and remove pork loin from instant pot.

  • Add water to instant pot. Scrape up any bits from the bottom. Add trivet to instant pot as well.
  • Place pork loin back into instant pot, on top of trivet. Set instant pot for 12 minutes of High pressure (meat) cooking.
  • Allow natural pressure release (NPR) for 5 minutes. Remove pork loin and ensure its temperature is at 145 degrees F, 63 degrees C, before serving. Allow meat to rest for 5 minutes before cutting and serving.

Blueberry & Lemon Sauce

  • While pork loin is cooking via instant pot, make sauce, using a small sauce pan or pan, over medium heat.
  • Add your coconut butter, lemon juice, blueberries, syrup, orange extract, and salt. Stir occasionally for about 10 minutes, until sauce thickens.
